Η Άννα-Μαρία Μπαρού ξέρει να δημιουργεί και να δίνει χρώμα στις γιορτές. Τα φετινά Χριστούγεννα θα είμαστε όλοι σπίτι και τι καλύτερο από το να ακολουθήσουμε τις πεντανόστιμες συνταγές της.
Κορμός με βατόμουρα
Υλικά
6 αυγά
½ φλιτζ. και 2 κ.σ. ζάχαρη
1 βανίλια
1 φλιτζ. αλεύρι για όλες τις χρήσεις
200 γρ. φρέσκα βατόμουρα
Λίγη ζάχαρη άχνη για τη διακόσμηση
Για τη σαντιγί
200 ml κρέμα γάλακτος
2 κ.σ. ζάχαρη
Για τη σάλτσα βατόμουρο
200 γρ. κατεψυγμένα βατόμουρα
2-3 κ.σ. ζάχαρη
Εκτέλεση
Προθερμαίνουμε τον φούρνο στους 180°C. Χτυπάμε τα αυγά στο μίξερ 2-3 λεπτά μέχρι να φουσκώσουν. Στη συνέχεια βάζουμε τη ζάχαρη και τη βανίλια και συνεχίζουμε το χτύπημα για άλλα 3-4 λεπτά ή μέχρι να ασπρίσει το μείγμα μας. Σε αυτό το στάδιο προσθέτουμε το κοσκινισμένο αλεύρι πολύ σιγά και χτυπάμε στη χαμηλή ταχύτητα μέχρι να γίνει ένα ομοιογενές μείγμα. Βάζουμε το μείγμα σε ένα λαδωμένο ταψί (40×28) στο οποίο έχουμε τοποθετήσει λαδόκολλα και το ψήνουμε για 10-12 λεπτά. Μόλις το βγάλουμε από τον φούρνο, το αναποδογυρίζουμε πάνω από μια πετσέτα, ξεκολλάμε τη λαδόκολλα από το πάνω μέρος, την αντικαθιστούμε με καινούρια και τυλίγουμε πολύ απαλά (μαζί με την πετσέτα) σε ρολό. Μόλις κρυώσει το κέικ, ξετυλίγουμε προσεκτικά το ρολό και αφαιρούμε τη λαδόκολλα, απλώνουμε τη σάλτσα βατόμουρο και από πάνω την κρέμα σαντιγί και ξανατυλίγουμε. Προσθέτουμε τα βατόμουρα και πασπαλίζουμε με τη ζάχαρη άχνη.
Σαντιγί
Χτυπάμε την κρέμα γάλακτος με τη ζάχαρη μέχρι να γίνει σαντιγί.
Σάλτσα βατόμουρο
Βάζουμε τα κατεψυγμένα βατόμουρα (περιμένουμε 3-4 λεπτά να μαλακώσουν λίγο) στο μούλτι και τα λιώνουμε. Τα βάζουμε σε ένα κατσαρολάκι, προσθέτουμε τη ζάχαρη και, μόλις πάρει μία βράση, αφαιρούμε τη σάλτσα από τη φωτιά. Την αφήνουμε να κρυώσει πριν τη χρησιμοποιήσουμε.
