Υλικά
1½ κιλό πατάτες (βραστές και ξεφλουδισμένες)
6 πράσα (μόνο το άσπρο μέρος)
50 γρ. βούτυρο
Αλάτι
Άσπρο πιπέρι
1 λίτρο γάλα
350 ml κρέμα γάλακτος
75 ml ελαιόλαδο
Εκτέλεση
Βάζουμε το πράσο στο μούλτι με λίγο νερό και το λιώνουμε. Στη συνέχεια το σοτάρουμε με το βούτυρο, προσθέτουμε το αλάτι, το πιπέρι και τη μισή ποσότητα από το γάλα και τα αφήνουμε να σιγοβράσουν για 15 λεπτά. Μόλις κρυώσει ελαφρώς το μείγμα, το μεταφέρουμε στο μπλέντερ και προσθέτουμε τις πατάτες, το αλάτι, το πιπέρι και το υπόλοιπο γάλα και τα λιώνουμε. Μεταφέρουμε το μείγμα στην κατσαρόλα, αφήνουμε να πάρει μια βράση 2-3 λεπτά, προσθέτουμε την κρέμα γάλακτος, ανακατεύουμε και αποσύρουμε το μείγμα από τη φωτιά. Σερβίρουμε σε φλιτζάνια του καφέ και γαρνίρουμε με λίγο ελαιόλαδο.
